Ants Hiding in a Log from the Anteater

Serves 2

2 slices of whole grain bread
3 tablespoons cream cheese
24-30 raisins (ants)

Remove crusts from the bread. Spread half the cream cheese on each slice.
Cut each slice into 3 strips (logs).  Place 4-5 raisins in a line on each strip. Stack two strips together like a sandwich.  Place the third on top to form a triple-decker.

You now have ants hiding in a log from the anteater.  Feed them to your little anteaters.

Crunchy Pesto Goat Cheese Roll-ups

Serves 6

6 slices nutty grain bread, crusts removed
1/2 cup goat cheese
1/2 cup ready to use basil pesto
1/2 cup wheat germ.

On counter, roll the bread slices to about 1/8th inch thick. Spread each slice with goat cheese. Spread each with the pesto. Sprinkle the wheat germ over the pesto. Roll up tightly. Keep in refrigerator till ready to serve.

Golden Gate Quesadillas

Serves 4
 
4 whole grain flour tortillas
1/4 cup apple butter
1 cup shredded low-fat cheese
1 large golden delicious apple, peeled and finely chopped
1/4 cup golden raisins,
1 cup low fat yogurt, your favorite flavor.

Heat oven to 350F. Brush 1 side of each tortilla with apple butter. Place tortillas, apple butter side up, on a baking sheet. Sprinkle evenly with cheese, apples and raisins. Bake 8 to 10 minutes or until cheese is melted. Cut into wedges. Serve with yogurt.

Holey Guacamole Rolley

Serves 1

1 whole wheat tortilla
1 slice Swiss cheese
Guacamole, as desired

Spread tortilla with guacamole. Place a slice of Swiss cheese on top. Roll it up and it's ready to eat. Its fun to dip into your own cup of salsa, too, for that extra little bit of zing!
